Black Trumpet Powder
This is the powdered version of the richly flavourful black trumpet mushroom (Craterellus cornucopioides). While the reconstitued whole dried mushroom works best in stews, soups and even in desserts, reach for the powdered version for sauces and gravies. You can also sprinkle the powder on any food that would be enhanced by its strong, almost chocolatey flavour, not least pastas, pizzas, and omelettes. It pairs exceptionally well with eggs. Try infusing sea salt with a pinch of the powder to give any dish a wonderful mushroomy finishing touch.
