Broken Wild Rice
Broken wild rice is the smaller, broken grains of the grass (Zizania palustris) that, like rice, grows in shallow water. A traditional Indigenous food, it is now widely used in North America because of its delicious nutty flavour. The broken grains are more suitable for soups and stews than the full grains. They are good in savoury dishes, especially when cooked with onions, garlic, wild mushrooms or nuts. Baked with birch syrup and ample cream or milk, they make a great dessert.
