Balsam fir is one of Canada's most fragrant evergreen trees, which has made it a popular choice as a Christmas tree, but there is much more to this lovely conifer. It tastes just as great as it smells: sweet, woodsy and with a note of citrus. That is why some Canadian distillers use it to flavour their gins, and it's why it's a key ingredient in our evergreen forest tea. We also sell it as a jelly, but here we capture its robust flavour in a syrup that's especially tantalizing in a cocktail. Try it in gin to make Dyson's recipe for a balsam fir gimlet or the LCBO's recipe for a balsam fir champagne cocktail. The syrup will develop some sediment over time, so shake it well before using.

just what I was looking for

It's nearly impossible to find spruce beer in Ontario as it seems to be more common in Quebec, this Balsam fir syrup has a close enough flavour to spruce and is delicious to mix with carbonated water or green tea.
