Very Dark Maple Syrup
Maple sugar was the gift European settlers received from First Nations peoples living in the belt of hardwood forest in northeastern North America. It was not until much later that maple syrup became the preferred maple product. Our Very Dark syrup is excellent in baking and even in meat dishes. Try it as a glaze and as a bass note in sauces, dressings, and marinades. Our syrup comes from a single forest near Goderich, Ontario. To avoid developing burnt or smokey flavours, our syrup is first run through a reverse osmosis machine that produces a clean tasting syrup full of true maple flavour. It is then further reduced in a low temperature simmer to 66 brix.
Our maple syrup is different from conventional maple syrup because animal-fat defoamers are not used, and all the equipment used is washed in the pure water taken from the sap. Formaldehyde plugs that can hamper microbial and fungal growth are not used and the trees are not injected with chemicals that force them to produce more sap.
Maple syrup should be used within three years of being purchased. Opened maple syrup can last for one year in the fridge.
