King Boletus / Porcini / Ceps
The King Bolete (Boletus edulis) is perhaps the best-known wild mushroom worldwide. It's known by many names (porcini, ceps, and others) and is prized in Europe for its flavour and its versatility. It can be used fresh or dried in any dish that requires a meaty, umami flavour. It pairs equally well with duck, beef, and game fowl as it does with dairy and shellfish, and is a staple in many vegetarian and vegan dishes.
