Hedgehog Mushrooms
Hedgehog mushrooms (Hydnum repandum) are an autumn mushroom that is one of our favorites. Their mild nutty flavour makes them extremely versatile. It is similar to the taste of a chanterelle but without the fruitiness. You can cook them with onion, garlic and parsley in a Duxelles, sauté them by themselves, or add them to any dish that calls for a mushroom that won't overpower other flavours.
