Sweet (North American) Chestnut flour - Castanea dentata - are smaller and sweeter than European chestnuts and very tasty. Although used most often in traditional stuffings, they are also excellent in soups and stews. Mix chestnut flour with cake and pastry flour for spectacular shortbread or pâte sucrée. Use in a roux when making creamy soups to create a sweet nutty flavour base. It is also features in Italian-inspired recipes for fresh pasta and pan forte.
