Green Elderberry Capers
Green elderberry capers provide a delightful crunchy burst of flavour. Made with premature green elderberries ( Sambucus) harvested in Quebec, and cooked in a light brine, these are great paired with fish, in salads or anywhere you want a burst of herbaceous vinegar and a pleasant crunch. They have a similar texture to preserved green peppercorns but not quite as much heat, and are a great local substitute for either capers or green peppercorns.
