Cattail Hearts
Cattail (Typha latifolia), which grows abundantly across North America, is entirely edible, but the best part is the heart of the stalk. It is similar in texture to heart of palm, but cattail hearts are smaller, more tender and a lot tastier. Ours are preserved in a light lemon marinade, which retains their mild, fresh flavour. Eat them straight out of the jar as an appetizer, or add them to a salad.
