Haskap Compote
Haskap is the berry of the blue honeysuckle (Lonicera caerulea). Its flavour is stunning. It's like eating blueberry, grape, and raspberry at the same time. There are many North American honeysuckle varieties, but few produce edible berries and those that do are considered at risk or endangered. Blue honeysuckle is a varietal from Siberia and Japan, where the Ainu people call it "haskap," meaning "many fruits on branches." So it is not a native Canadian wild food. However, because much of northern Canada has ideal conditions for haskap, more and more berry farmers here are growing it. Try some of our haskap compote and you'll be glad they are.
