Olio of conifer or pine cone syrup is a mugolio like syrup made by soaking scotch pine cones in sugar and leaving them to extract, then slightly ferment in a glass container. With a sweet woodsy fermented citrus like flavour, oilo of conifer can be used in cocktails, on ice cream, in baking, or as a treat by its self.  The flavour pairs beautifully with cooked pears, gin or soft cheeses. Made with Ontario harvested Scotch pine cones collected when still green as well as organic cane sugar. This is a case when the product is much more than sum of its parts.
