Sheep's polypore - Albatrellus ovinus
Sheep's polypore or Albatrellus ovinus is a much overlooked and underrated mushroom. Its robust flavour works in a wide variety of dishes from simple cream sauces, where their flavour is the star, to rich complex dishes where their nutty full flavour serves as a backbone, supporting other ingredients. Sheep's polypore pairs well with duck, beef, game, and shellfish as well as wild rice. Vegetarian dishes will benefit from its strong savoury notes.
