Anise Hyssop

Anise hyssop (Agastache foeniculum) is a member of the mint family that grows in the north in many parts of Canada, and all across the northern prairies. It has a fennel or licorice flavour, and its dried leaves and flowers make a delicious infusion. Or add honey and reduce the infusion to a syrup, which you can either jelly or use to enhance vinaigrettes, even cocktails and distillates. Its flavour also pairs wonderfully with fresh fruits, especially melons and strawberries, and it also goes well with soft cheeses, lamb and seafood.

For the strongest flavour, pick Anise hyssop when the flowers are finishing their full bloom in the late summer, as the licorice-tasting oils are at their strongest when the plant is fully mature, just before it starts to seed.
