Alder Catkins
Alder catkins, also known as dune pepper, are the dried male flowers of the crisp alder (Alnus crispa). Foraged in winter, when their resin content is lowest, they have a zesty, citrusy flavour and a nice peppery finish with just a hint of bitterness. They pair particularly well with fish and pork dishes. Try using them ground as a seasoning in place of black pepper.
