Haskap Syrup
Haskap syrup is a sweet robust purple berry syrup perfect for salads, cocktails desserts and more. Haskap is the berry of the blue honeysuckle plant, aka Lonicera caerulea. While there are many North American honeysuckle varieties, very few are edible and edible varieties are considered at risk or endangered.
These honeysuckle varieties, with origins in Northern Siberia and Japan where it was named "Many fruits on branches" are not Canadian wild food. However, much of Canada is ideal for growing Haskap and as a result it is slowly being picked up by berry farmers the country over. Its blueberry, grape, raspberry-like flavour is stunning, especially if picked in dry weather, as ours are.
Try Haskap syrup drizzled on to a wheel of brie and baked, pour some over your yogurt and muesli or use in place of grenadine syrup with your favorite cocktails such as a better than authentic Hurricane.
