Green Elderberry Capers
Green elderberry capers provide a delightful crunchy burst of flavour. They are the immature, green berries of the common elderberry (Sambucus canadensis). Ours are harvested in Quebec and cooked in a light brine. They are great paired with fish, but you could add a few to a salad or to any dish that calls for a burst of herbaceous vinegar and a pleasant crunch. They have a similar texture to preserved green peppercorns but not as much heat, and are a good substitute for them. You could also substitute them for olives.
