Cloudberry Compote
Cloudberry (Rubus chamaemorus) compote is made from cloudberries picked across the middle north of Canada, often where few people live. Cloudberries (also known as Rubus chamaemorus, Bakeapples, or Baie Qu'appelle) are related to the raspberry but are bigger and taste like a cross between passion fruit and apricot. Cloudberry compote is often eaten as a preserve on toast or fresh bread. It's used in restaurants as an accompaniment to game such as caribou. It is excellent in a pie made with 80 per cent apple, 20 per cent cloudberry. It is perfect for desserts, especially desserts with chocolate.
